Wok It Plays With Fire At Dubai Food Carnival 21-22 February- Dubai Festival City

Wok It, the home of Far Eastern Flavours, and authentic street food, will be sure to draw the crowds at this year’s inaugural Food Carnival to be held at Dubai Festival City on Friday 21 and Saturday 22 February, preparing and serving live two of its bestselling dishes which are not available elsewhere in the UAE.

If you haven’t already visited the restaurant based in Bur Dubai, the food carnival is the ideal time to discover the real taste of authentic street food, cooked as it was intended, in the open air. Wok It’s specialist street food chefs will be making delicious Martabak Telor and Martabak Manis, traditional savoury and sweet street dishes, according to recipes that have been handed down over five generations and kept secret within the family.

If the mere aromas don’t tempt you, just a small nibble of these delicacies will have you hooked and joining the queue for more. Martabak Telor is made of a flat bread dough and filled with beef, or chicken and/or vegetables and spices, along with a few other special ingredients, and lightly fried. The result is a moreish appetiser that is not in the least greasy, teases the palate and any thoughts you had of sharing it vanish in a trice.

The sweet version, Martabak Manis is completely different. The dough is cooked on a low heat in a specially imported 25kg cast iron pan (yes truly the weight of a holiday suitcase!) to create a chewy, spongy texture not dissimilar from an English crumpet, which is then filled with chocolate, cheese and cashew nuts. An amazing combination that just dances across the tongue with its salty sweetness. Now this is perfect for sharing.

The team’s experienced wok players will be literally playing with dragon flames as they create such dishes as stir fried Szechuan beef or chicken, Chicken or vegetable Bakmi Goreng and Wok fried Tofu with vegetables. Watch these artists at work and taste the delight in the flavours that dance across your tongue.

Wok It will also be offering some of its restaurant favourites beef and chicken rendang - the world’s most favourite dish according to CNN (definitely spicy) - and Nasi Uduk, steamed jasmine rice, blended with Wok It’s own herbs and spices and coconut, served with fried chicken, potato cake, caramelised soybean and sambal balachan for that extra kick of spice.
