Dough: Work all ingredients together to obtain a smooth dough. Put aside to rest. For the stuffing: Remove seeds from tomatoes, marinate tomatoes with orange and lemon zest, vanilla, anise, maple syrup and olive oil. Dry them for about 1 hour in a 100 C oven. Cut dried tomatoes into cubes. Prepare the marmelade: Simmer together the tomatoes, lemon juice and sugar until dense. Put aside to cool. Prepare the ravioli, rolling out the dough, cutting it into to squares and stuffing each with dried-tomato filling. Sheep yogurt ice-cream: Heat milk, cream, sugar. Beat in egg yolks. Add sheep yogurt and freeze. Boil ravioli in salted water and drain well. Arrange ravioli on plate, accompany with marmelade and serve with ice-cream. |
