Semolina-Schmarren with Marinated Berries

Ingredients
250  ml     Milk
50  gms     Butter
70  gms     Semolina
150  gms     Egg yolks
150  gms     Egg whites
70  gms     Sugar
    Vailla bean
    Pinch salt
30  gms     Butter
40  gms     Raisins
250  gms     Fresh berries
60  gms     Powdered Sugar
40  gms     Raspberry spirits
2  tbsp     Lemon juice
    Vanilla bean, the seeds
Preparation Method

In a pot bring to boil milk, butter, vanilla bean and salt. Stirring constantly, add semolina and simmer until creamy, about 20 minutes. Remove from heat and beat egg yolks into the hot semolina. Whip egg whites and sugar until stiff and carefully fold into semolina mixture. Butter a pan, pour in the batter and stir in raisins. bake semolina-schmarren in a 180 C over for about 15 minutes or until golden-brown. Meanwhile, marinate berries with sugar, vanilla seeds, raspberry spirits and lemon juice. Cut the schmarren into small pieces with a spatula. Place the schmarren on a plate and dust with powdered sugar. Serve marinated berries separately.
