Red Mullet Baked in Grape Leaves

Ingredients
2  kg     Red Mullets
500  gms     Grape leaves
500  gms     Zucchini, diced
500  gms     Eggplant, diced
    Fennel bulbs, small, diced
1  kg     Potatoes, diced
    Baby leeks, diced
150  gms     Extra virgin olive oil
1  kg     Tomatoes
      Parsley, chopped
      Salt
      Pepper
Preparation Method

Wash and fillet red mullets. Wrap grape leaves around filleted fish. Simmer chopped vegetables in a casserole with olive oil for 30 minutes. Place cooked vegetables on a baking sheet with red mullets on top and bake in a preheated 250 C oven until fish is cooked. When the red mullets are ready, arrange vegetables and fish on dishes, sprinkle with parsley and serve.
