Cut the bread into long, thin, diagonal slices, place in a large baking pan, sprinkle with olive oil, crushed salt and oregano and bake in 180 C oven until crisp. Bake the goat cheese and roast the pine nuts. Keep the bread, pine nuts, and cheese hot. In a bowl, prepare a marinade with chopped sun-dried tomato, bell pepper, lemon and all other ingredients. Season greens with this marinade. Garnish the surface of the dishes with ground pink pepper. Arrange the greens in fluffy piles on the plates. Garnish with toasted bread fixed in place vertically with a dab of cheese. Add the sun-dried tomatoes and complete with pine nuts. Serve immediately. |
