Cut each slice of bread into two rectangular strips. Place the bread between two sheets of parchment paper and press with a rolling pin until bread is very thin. Pan fry the slices of bread in clarified butter until golden brown and crisp. Slice potatoes into long strips, about 1,25 mm thick. Heat oil in a deep pan and fry potatoes until crisp. Drain and season with salt. Puree aromatic herbs and mayonnaise in a food processor to obtain a smooth paste. Spread herb mayonnaise on toasted bread. Make 3-layer sandwiches with crayfish. In a large bowl toss the lettuce with olive oil and lemon juice. Arrange crayfish toast on plates and complete with salad and fried potatoes. |
