Crayfish Toast with Herb Mayonnaise
Serves : 4 person(s)
400  gms     Crayfish tails, cooked
12      White bread (crustless slices)
50  gms     Clarified butter
50  gms     Mayonnaise
    Bunch basil
    Bunch parsley
100  gms     Potatoes
100  gms     Lettuce: Red and yellow mangold, mizuna
2  tsp     Extra virgin olive oil
1  tsp     Lemon juice
500  ml     Oil for frying
Preparation Method

Cut each slice of bread into two rectangular strips. Place the bread between two sheets of parchment paper and press with a rolling pin until bread is very thin. Pan fry the slices of bread in clarified butter until golden brown and crisp. Slice potatoes into long strips, about 1,25 mm thick. Heat oil in a deep pan and fry potatoes until crisp. Drain and season with salt. Puree aromatic herbs and mayonnaise in a food processor to obtain a smooth paste. Spread herb mayonnaise on toasted bread. Make 3-layer sandwiches with crayfish. In a large bowl toss the lettuce with olive oil and lemon juice. Arrange crayfish toast on plates and complete with salad and fried potatoes.
