50  gms     Baby marrow/courgettes
50  tsp     Celery, roots
Preparation Method

1 SOAK DRIED BOLLETS IN 2DL OF WATER, STRAIN AND KEEP THE WATER
2 MAKE A CLARIFICATION WITH MINCED CHICKEN, LEEKS, CARROTS, ONIONS AND 1/4 OF THE DRIED BOLLETS, EGG WHITE AND SEASONING
3 PLACE IN STOCK POT WITH STOCK
4 CLARIFY AS A NORMAL CONSOMME
5 STRAIN AND COOL CONSOMME
6 ADD SHERRY AND POUR INTO CONSOMME CUPS
7 ADD CHOPPED CHIVES, SLICED BOLLETS AND VEGETABLE PERLES
